Ohmic heating-assisted vacuum distillation (ODVD) offers a faster and more energy-efficient method for producing non-alcoholic beer compared to vacuum rotary distillation (VDD). Both methods impact aroma compounds, but ODVD presents a promising alternative for quality non-alcoholic beverage production.
