Abstract:
The contents of matrine (MT) and oxymatrine (OMT) in 112 jujube honey samples were determined using an isotope-dilution-LC-MS/MS method. The detection rate was 62.5 %, with a concentration range of ND - 319.3 μg/kg. The average content of MT was higher than that of OMT, which differs from the previously reported pattern in acacia honey (AH). One-year dynamic monitoring revealed that OMT was transformed to MT in jujube honey, with the transformation rate of Ziziphus jujuba Mill. honey (JH) significantly higher than that of wild Ziziphus jujuba Mill. var. spinosa honey (WJSH). The DPPH assay demonstrated that the antioxidant activities of three kinds of honey were JH > WJSH > AH, and the SC50 values showed a negative correlation with the transformation rate constant k. The results indicate that the transformation of OMT to MT in jujube honey is related to its antioxidant activity and furthered by its high phenolic content.
