Bioaccessibility and combined effect in transepithelial transport mechanisms of different dried thinned peach

Abstract:
The present study evaluated the bioaccessibility and metabolic transport of different dried thinned peach polyphenols by using in vitro simulated digestion and Caco-2 cells models. Compared to freeze drying (FD) and natural drying (ND), hot air drying at 50 °C (HAD50) thinned peach extracts exhibited the highest bioaccessibility (91.19 %) in the simulated gastrointestinal digestion, and well absorption behaviour in Caco-2 cells. Particularly, the combined effect in transepithelial transport in the co-incubation of the main thinned peach polyphenols was observed. Furthermore, 26 metabolites were identified after gastrointestinal digestion, the phenolic acids exhibited higher stability during digestion. Additionally, the transepithelial transports of HAD50 thinned peach polyphenols were affected by P-glycoprotein (P-gp)-mediated efflux and organic anion transporting polypeptide (OATP)-mediated influx effects. The present study demonstrates that the HAD50 treatment of thinned peaches is proved to be an effective way to enhance the bioaccessibility and permeability of polyphenols compared to FD and ND.
