Abstract:
The increasing demand for high food safety and quality is driving the continuous development of modern food sciences. Emerging two-dimensional (2D) nanomaterials have demonstrated remarkable potential for component analysis and production monitoring of Baijiu production. This review provides an overview of the latest advances in 2D materials throughout the entire Baijiu brewing process. We provide a comprehensive explanation of the working principle of 2D materials, discuss the challenges and prospects of this nanotechnology, and analyze the current application trends and future development directions of 2D materials in the food industry. To enhance the feasibility of 2D materials in commercial applications, it is necessary to clarify their sensing mechanism, identify potential risks, and improve environmental stability. This review aims to broaden readers' horizons in the application of 2D materials and lay a foundation for future 2D material-based nanotechnologies to drive innovation in the food industry.
