Abstract:
To explore the effects of irradiation and fermentation on the flavor of cherry juice, this study characterized the volatile components of cherry juice by gas chromatography-mass spectrometry (GC-MS), gas chromatography-ion mobility spectrometry (GC-IMS) and comprehensive two-dimensional gas chromatography-mass spectrometry (GC × GC-MS) combined with machine learning techniques. Electron beam irradiation (EBI) increased concentrations of benzyl alcohol, methyl heptanoate and methyl butanoate in C + EBI. Fermentation increased concentrations of 3-methylphenol, linalool, and ethyl 2-hydroxy-4-methylpentanoate in C + EBI + F. The 2 kGy + F treatment yielded optimal flavor quality, with 2-nonanone, 2-tridecanone, levomenthol, and 2-undecanone serving as key markers, contributing floral, fruity, tart, and minty notes. For efficient aroma profiling, PLS-DA identified 17, 22 and 36 key features in the GC-MS, GC-IMS and GC × GC-MS datasets, respectively. These features were used in machine learning models, with the NBM model showing the best classification and prediction performance.
