Abstract:
Due to their diverse physiological functions, bioactive peptides have attracted widespread attention in the fields of functional food development and biomedical applications. However, traditional methods for predicting and screening these peptides are often time-consuming, costly, and lack scalability, thereby hindering their large-scale development and application. This review examines how artificial intelligence (AI), molecular simulation, and modern instrumental analysis synergistically enable high-throughput screening and mechanistic analysis of bioactive peptides. AI technologies, through efficient data-driven prediction and screening of novel peptides, effectively overcome the limitations of conventional approaches. The integration of AI, molecular simulation, and modern instrumental not only significantly enhances the efficiency of peptide development but also opens new avenues for their application in precision nutrition and functional foods. This review will facilitate the innovative development of bioactive peptides and highlights the substantial potential of emerging technologies in driving innovation in food science and promoting human health.
