Comprehensive multi-omics integration analysis identifies the functional association between linoleic acid and meat

Mongolian and Luxi cattle are premium indigenous Chinese beef breeds, yet their meat quality attributes and the molecular mechanisms underlying intramuscular fat (IMF) deposition in these breeds remain less well-characterized compared to internationally commercialized breeds, including Angus and Wagyu. Motivated by this, we conducted comprehensive meat quality assessments and integrated multi-omics analysis to elucidate the relationship between linoleic acid (LA) metabolic fate and breed-specific meat quality variations. Results revealed parallelism in the meat quality traits between Wagyu and Mongolian cattle. Functional profiling identified distinct LA metabolic pathways. In both Mongolian and Wagyu cattle, LA metabolism was predominantly involved in the synthesis of other PUFAs and MUFAs, whereas in Angus and Luxi, LA underwent β-oxidation and integrated into the TCA cycle for the ATP/NADPH production. This differential LA partitioning was linked to TGF-β signaling. Our study provides novel insights into functional involvement of LA in IMF deposition among cattle breeds.
