Hydrocolloids are a class of long-chain polymers with complex molecular structures that exhibit various physiological functions and biological activities. Anthocyanins, natural plant pigments, impart rich colors to plants and possess a variety of biological activities. However, anthocyanins are susceptible to degradation, which affects their application, as well as their digestion, absorption, and biological accessibility in the gastrointestinal environment. Research indicates hydrocolloids (proteins, polysaccharides) improve anthocyanin stability when hydrocolloids interact with anthocyanins. Hydrocolloids and anthocyanins can be assembled into functional composite systems to protect anthocyanins from degradation and improve the functional properties of hydrocolloids. In addition, composite systems may have superior biological functions compared with single systems. Due to the numerous hydrocolloids, this paper systematically reviews the interaction mechanisms between different hydrocolloids and anthocyanins in existing studies, and the assembly forms and functional characteristics of hydrocolloid-anthocyanin composite systems. This review is expected to provide important guidance for hydrocolloid-anthocyanin composite systems in the biological, medical, and food industries.
