Research review of enzyme-responsive packaging in food preservation

Abstract:
Food spoilage caused by microbial contamination not only poses significant risks to food safety but also hinders economic development. Therefore, it is imperative to study appropriate food packaging solutions to address this issue. Enzyme-responsive packaging has emerged as a prominent area of research due to its exceptional advantages, which include not only bacterial inhibition but also specificity, self-initiation, and safety-attributes that are not present in other types of responsive packaging. This paper begins by introducing the principles of enzyme-responsive packaging. Furthermore, the classification of enzyme-responsive packaging is examined, and methods for preparing are discussed. Additionally, this review summarizes advancements in the application of enzyme-responsive packaging for food preservation and proposes future research directions and focal points. In conclusion, this review aims to serve as a reference for the comprehensive research and development of enzyme-responsive packaging.
