Abstract:
This study investigated the regulatory effect of magnetic field-assisted osmotic dehydration (OD) on the quality of strawberries. The experiment evaluated the influence of different magnetic field intensities (0-10 mT) on dehydration efficiency and cell structure. The results showed that the 5 mT treatment group exhibited a significant increase in both water loss (WL) and solid gain (SG). Low-field nuclear magnetic resonance (LF-NMR) analysis revealed that the magnetic field treatment reduced the proportion of free water and increased the proportion of bound water, optimizing the water state. Laser confocal microscopy (CLSM) results confirmed that the cell morphology in the 5MT group remained better compared to the untreated group. The cell area, perimeter, and roundness increased by 22.81%, 15.51%, and 9.76%, respectively. Appropriate magnetic field-assisted osmotic dehydration can regulate water migration and strengthen cell structure, providing a new solution for improving the quality of strawberry products.

Dehydration Synthesis
Dehydration synthesis (also called a condensation reaction) is the chemical process in which two molecules covalently link together to form a new molecule, along with the release of a water molecule. Many physiologically important compounds form by dehydration synthesis reactions, such as complex carbohydrates, proteins, DNA, and RNA.
