Honey authentication: A patentometric and scientometric review of global technological and scientific advances

Abstract:
This review presents the global technological and scientific landscape of honey authentication through analysis of 386 patent documents and 707 scientific articles published before April 2025. Bee honey predominates in literature, particularly unifloral types produced by stinging species, accounting for 96.7% and 73.1% of patent documents and scientific articles. Chromatographic techniques are employed analytical approaches, representing 55% and 60% of patents and scientific articles. Melissopalynology appears exclusively in scientific literature (about 15% of articles). Nuclear magnetic resonance shows low representation in datasets, comprising 8% and 10% of patent documents and scientific articles. China leads in patents and publications, while Russia and Italy rank second in patents and articles. Scientific technological output increased after 2015, driven by universities and research centers. Technological life-cycle analysis indicates honey authentication technologies lie between growth maturity. Co-occurrence analysis highlights need to consolidate analytical approaches and develop portable, low-cost scalable solutions ensuring quality consumer confidence.
