Abstract:
Zanthoxylum bungeanum sprouts (ZBS) rich nutritional component have long history of edible and favored by consumers. In this study, a facile, rapid method was proposed for assay the amino acids profile in ZBS based capillary electrophoresis. The effect of the concentration of borax, α-cyclodextrin (α-CD), and the pH of the separation background electrolyte (BGE) were optimized. Under optimal conditions, baseline separation of 13 AAs was achieved, with a linear range of 20-300 μmol/L and a linear correlation coefficient (R2) 0.9837-0.9994. The RSD of the migration time and peak area were ranged in 2.5-4.8% and 1.6-5.0%, respectively the limit of detection (LOD) was 3.6-11.7 μmol/L. Phenylalanine, histidine, glycine, threonine, serine and alanine were commonly found in 35 ZBS. The content of the amino acids in ZBS ranged from 1.57 to 12.82 mg/g, in which the glycine content occupied about 50%. This work demonstrated promising potential for the quality study of ZBS.
