Innovative valorization of date seed extract: extraction, optimization and characterization for sustainable sugar

Kentichi date seeds, an underutilized agro-waste, can be valorized into valuable extracts rich in sugars, proteins, and antioxidants. Optimized extraction using Response Surface Methodology (RSM) yields high recovery, demonstrating potential for food applications.
