Abstract:
Limited studies have characterized bacteria contributing to raw meat spoilage at the species/strain level. We sequenced 180 bacterial strains recovered from aerobically packaged ground beef. The information from this study will help us better understand the composition of bacterial communities associated with ground beef spoilage and the related genetic factors.
