Fish processing produces large volumes of by-products that are rich in proteins, long-chain lipids, polysaccharides, minerals, and diverse bioactive molecules. This chapter synthesizes the compositional characteristics of these fractions and distils their intrinsic functional and material properties, showing how molecular composition underpins applications in biomaterials, delivery systems, food formulation, and biomedical uses. The advances in platforms derived from fish by-products and reported biological activities have been summarized. By consolidating evidence across composition, functionality and bioactivity, the chapter clarifies current capabilities and limitations and highlights where targeted research and development can most effectively enable sustainable, high-value conversion of fish by-products. The significance of this work lies in providing a tightly integrated for fish by-products, evidence-based synthesis to inform subsequent research and application.
