Abstract:
This study constructed complexes between four major mango peel polyphenols (gallic acid, mangiferin, ellagic acid, quercetin) and phosvitin (PSV). Polyphenols bound to PSV mainly via hydrogen bonds and hydrophobic interactions, increasing α-helix content while decreasing β-sheet content. Compared to native PSV, complexation significantly enhanced antioxidant capacity. Notably, PSV-quercetin showed the highest DPPH (89.2%) and ABTS (96.0%) scavenging activities, and PSV-gallic acid exhibited the strongest FRAP value (1.45 μmol Fe2+/mL). Several complexes outperformed their corresponding free polyphenols and physical mixtures, indicating synergistic effects from molecular interactions. PSV-mangiferin maintained optimal colloidal stability during 7-day storage. These findings provide a strategy for valorizing mango peel waste and developing functional protein-polyphenol conjugates with enhanced antioxidant activity and storage stability.
