Stage-dependent aroma evolution of Liupao tea during long-term storage revealed by molecular sensory science

Abstract:
Storage plays a critical yet insufficiently understood role in shaping the aroma quality of Liupao tea (LPT) during long-term aging. Here, a molecular sensory science strategy was used to investigate the evolution of odor-active compounds (OACs). Multivariate analysis revealed significant stage-dependent variation (PERMANOVA, R2 = 0.516, p < 0.001), with transitions at approximately five-year intervals. Random Forest modeling demonstrated a strong association between OAC profiles and storage year (R2 = 0.996, RMSE = 0.22). With aging, aroma shifted from floral and fruity to stale and betelnut-like attributes, accompanied by decreased terpenoids and increased carbonyl and aromatic compounds. Representative OACs such as (E,E)-2,4-Heptadienal (OAV = 4333) and Linalool (OAV = 1740) contributed to these changes. Notably, aroma evolution was driven by reorganization of relative contributions among existing OACs rather than compositional turnover. Collectively, these findings provide a time-resolved perspective on LPT aging and a basis for quality evaluation of dark teas.
