Abstract:
Yeast domestication is well documented, but its diversity across traditional practices remains less understood. Based on a large-scale sampling of farmhouse cultures, a new study reveals highly diverse, sexually competent yeast populations, uncovering an alternative domestication trajectory distinct from modern industrial strains.
