Abstract:
Soluble dietary fiber (SDF) was isolated from Actinidia arguta pomace using environmentally friendly techniques: ultrasound extraction, enzymatic hydrolysis, and their combination. Comprehensive analysis encompassed the physicochemical properties, structural characteristics, and biological activities. The findings indicate that ultrasound-assisted enzymatic treatment produces SDF with a loose structure, reduced molecular weight, and superior physicochemical, antioxidant, and adsorption properties, as well as strong antibacterial activity. The compound showed remarkable inhibitory potency toward α-glucosidase. This work presents practical strategies for the nutritional application of Actinidia arguta pomace-derived SDF in functional foods and health product additives.
