From complex matrices to clean plates: Magnetic solid-phase extraction for enhanced safety detection in cooking foods

Due to the complexity of food matrices and the presence of trace contaminants, especially the high fat and starch content in cooking foods, the extraction and detection of contaminants have become more challenging. Therefore, the efficient separation and precise detection of trace contaminants are of great significance. Magnetic solid-phase extraction (MSPE) is a magnetic adsorbent-based sample pretreatment technique that enables rapid separation and enrichment via an external magnetic field. From the perspective of cooking practice, MSPE technology provides innovative solutions for addressing the complex matrix of final dishes, monitoring hazardous substances derived from cooking process, and enabling rapid safety screening of raw materials in kitchens or supply chains. This review introduces the composition of magnetic adsorbents in MSPE and their application progress in safety detection of cooking foods. Considering the unique requirements of the cooking profession, the potential value of this technology in raw material evaluation, process optimization, and finished product safety control is discussed. Finally, the application prospects and development trends of MSPE in the field of cooking foods safety are analyzed and presented.
