Abstract:
Existing safety frameworks, focused narrowly on free and reversibly bound sulfite residues, fail to account for the persistent sulfonated derivatives formed during the sulfite treatment of food. While previous research identified these derivatives as chemical markers of sulfite treatment, these efforts rarely progressed beyond preliminary discovery. Critically, this foundational work lacked a systematic evaluation of their chemical and toxicological properties, and its insights have not been translated into regulatory practice. Drawing on preliminary evidence, this perspective argues for a paradigm shift in sulfite risk monitoring by expanding the scope beyond free and reversibly bound sulfite to include these persistent irreversibly bound sulfonated derivatives. To achieve this goal, we propose a foundational scientific framework that systematically characterizes key sulfonated derivatives, evaluates their toxicity, and develops robust analytical methods. We call upon researchers, industry stakeholders, and regulatory bodies to build on this foundation together to establish globally harmonized detection methods and safety thresholds. This collaboration is essential for developing updated, evidence-based regulations for food surveillance, ultimately ensuring stronger consumer protection.
