Abstract:
Bacteriocins produced by L. acidophilus were studied with respect to the character and size of the growth inhibition zones, diffusion across cellophane, sensitivity to proteases, nucleases and lysozyme, thermostability, capacity of adsorption by the indicator strains and effect on Lactobacillus. By the differences in the properties and action on various species of Lactobacillus the bacteriocins were classified as belonging to 12 types of L. acidophilus.
