Abstract:
The Baby-Foods process is explained and a rapid sum up of vitamins degradations factors. This paper studies vitamins degradations during processing and storage (Shelf live). Six vitamins were controlled in 26 recipies. The general results are listed. The vitamin C appears to be the most labile during storage and vitamins A and C during process.
