Area of Science:

  • Sensory Science
  • Psychophysics
  • Human Physiology

Context:

  • The whole mouth method is a straightforward gustatory test for assessing overall taste perception.
  • Standardized taste solutions are crucial for reliable gustatory assessments.

Purpose:

  • To develop and validate a new series of taste solutions for the whole mouth gustatory test.
  • To determine normal gustatory ranges and inter-taste relationships in healthy young adults.

Summary:

  • Gustatory threshold tests were performed on 123 healthy volunteers (17-22 years old) using sweet, salty, sour, and bitter solutions.
  • Normal recognition thresholds were established: 0.0165 mol/l (sweet), 0.0316 mol/l (salty), 0.000734 mol/l (sour), and 0.0000203 mol/l (bitter).
  • Principal component analysis indicated that the four basic tastes explain approximately 90% of taste threshold variation, with the primary component reflecting taste detection function.

Impact:

  • This study provides a standardized method for whole mouth taste testing.
  • Findings confirm the fundamental role of sweet, salty, sour, and bitter tastes in overall gustatory perception.
  • The established normal ranges serve as a reference for future gustatory research and clinical applications.
