[Conventional and alternative types of animal carcass disposal]

The paper gives a short overview over the historical development of knacher's yard trade to industrial meat production and explains present rendering law in Germany in view of EU legislation. The different ways of carcass disposal are described mentioning conventional rendering possibilities as well as alternative procedures.
