Background:

Buckwheat flour is a common ingredient in foods like pancakes.
Exposure to airborne buckwheat particles can trigger respiratory issues.

Observation:

A patient working in a pancake restaurant developed occupational asthma.
Specific IgE-mediated allergic reactions, including anaphylaxis upon ingestion, are associated with buckwheat.

Findings:

A specific bronchial challenge test confirmed buckwheat flour as the allergen responsible for the patient's asthma.
A minimal amount of buckwheat flour (10 micrograms) caused a significant drop in FEV1 (forced expiratory volume in 1 second) by 56%.
