Sus antecedentes:

  • El eugenol, un componente clave del aceite de clavo (80-90%), posee importantes propiedades antimicrobianas y antioxidantes.
  • El rápido metabolismo del aceite de clavo limita su biodisponibilidad; la encapsulación mejora su estabilidad y eficacia.
  • El desarrollo de sistemas de administración eficaces para el eugenol es crucial para su aplicación en la conservación de alimentos y la salud.

Objetivo del estudio:

  • Encapsular aceite esencial de clavo en un hidrogel de gelatina para mejorar la estabilidad y la actividad.
  • Evaluar el potencial antimicrobiano, antioxidante y de envasado de alimentos del aceite de clavo encapsulado.
  • Caracterizar las propiedades fisicoquímicas del hidrogel cargado de eugenol.

Principales métodos:

  • Se emplearon técnicas de Soxhlet y maceración para la extracción de aceite esencial de clavo utilizando etanol, metanol y agua.
  • Se prepararon hidrogeles de gelatina y se cargaron con aceite esencial de clavo extraído.
  • Se utilizaron espectroscopia infrarroja por transformada de Fourier (FTIR), microscopía electrónica de barrido (SEM) y difracción de rayos X (XRD) para la caracterización.
  • Se evaluó la actividad antimicrobiana contra E. coli y S. aureus, y se midió la actividad de eliminación de radicales.

Principales resultados:

  • La extracción Soxhlet produjo una mayor cantidad de aceite esencial de clavo (44%) en comparación con la maceración.
  • La eficiencia de encapsulación del aceite esencial de clavo en hidrogel de gelatina fue alta, alcanzando el 84,65 %.
  • El hidrogel cargado de eugenol demostró una mayor actividad de eliminación de radicales (57%) y zonas significativas de inhibición contra E. coli y S. aureus.
  • El recubrimiento de manzanas con el hidrogel extendió su vida útil, lo que indica su potencial como envasado activo de alimentos.

Conclusiones:

  • La encapsulación en hidrogel de gelatina es un método eficaz para mejorar la estabilidad y la biodisponibilidad del aceite esencial de clavo.
  • El hidrogel cargado de eugenol presenta potentes propiedades antimicrobianas y antioxidantes, adecuadas para el envasado activo de alimentos.
  • Este enfoque ofrece una estrategia prometedora para extender la vida útil de las frutas y reducir el desperdicio de alimentos.
