Resumen
Este estudio analizó el sabor del pimiento fermentado utilizando técnicas avanzadas, identificando compuestos clave y creando huellas dactilares de sabor únicas. Esto ayuda a garantizar una producción de pimiento fermentado estable y de alta calidad.

- Analizar exhaustivamente los perfiles de sabor del pimiento fermentado. Establecer métodos objetivos de evaluación de la calidad. Desarrollar huellas dactilares de sabor características.
Principales métodos:
- Se utilizaron nariz electrónica (E-nose) y lengua electrónica (E-tongue). Se empleó cromatografía líquida de alta resolución (HPLC) y cromatografía de gases-espectrometría de masas (GC-MS). Se aplicó análisis de mínimos cuadrados parciales ortogonales-discriminante (OPLS-DA).
Principales resultados:
- Se identificaron 24 aminoácidos libres, 6 ácidos orgánicos y 59 compuestos volátiles. El OPLS-DA diferenció con éxito las muestras de alta calidad, alineándose con las evaluaciones sensoriales. Se establecieron huellas dactilares de sabor características con alta similitud (> 0,95).
Conclusiones:
- Se desarrolló una base científica para evaluar la calidad del sabor del pimiento fermentado. Se proporcionaron parámetros técnicos para regular la producción de pimiento fermentado. Se permitió un control de calidad constante para los productos de pimiento fermentado.
