Resumen
La pasta de habas de Hubei hinchada es causada por Clostridium tyrobutyricum. Una combinación de nisina, clorhidrato de ε-polilisina y diacetato de sodio previene eficazmente su crecimiento, preservando la calidad de los alimentos.
Principales resultados:
- Se identificó la cepa LG12 de Clostridium tyrobutyricum como la bacteria dominante productora de gas.
- El aislado demostró un crecimiento óptimo a pH 5-7, alta tolerancia al calor (sobrevivió a 100°C durante 20 min) y tolerancia a la sal (hasta 10% de NaCl).
- Una combinación optimizada de nisina (50 mg/L), clorhidrato de ε-polilisina (500 mg/L) y diacetato de sodio (1250 mg/L) inhibió el crecimiento bacteriano en más del 99%.
