Resumen

Este estudio desarrolló un oleogel de aceite de camelia utilizando aislado de proteína de nuez-quitosano (WPI-CS) como sustituto de grasa saludable. La proporción WPI-CS:aceite de camelia impactó significativamente las propiedades del oleogel, con una proporción de 13:7 mostrando un rendimiento superior.
