Los polvos de proteína láctea, particularmente los ricos en caseína, pueden estabilizar las espumas de aceite, ofreciendo una alternativa más saludable a las grasas sólidas en los productos alimenticios. Los polvos sin grasa ni lactosa produjeron las espumas de aceite más estables.
