主な方法:

  • ブルーベリーエキス (FB),フェノールエキス (FF),アントシアニンエキス (FA) でPVA-GLフィルムを調製する.
  • 機械的 (ヤングのモジュール),熱的 (分解プロファイル),構造的 (形態学),水吸収,膨張,溶解性を含む膜の特性.
  • 7日間6.5 ± 1 °Cで保存したエビのFBおよびFAフィルムの色測定反応の評価

主要な成果:

  • ブルーベリー抽出物 (FB) を含んだフィルムは,FFとFAフィルムと比較して,物理的,化学的,機械的,熱的安定性を発揮した.
  • FBとFAのフィルムは7日間の貯蔵後に明確な色変化 (紫色から緑色/茶色) を示し,腐敗指数と相関していました.
  • ブルーベリーエキスを加えることで,水吸収,腫れ,溶解性が低下し,FFは最も低い溶解性 (16. 14%) を示した.

結論:

  • ブルーベリーエキスを含むPVA-GLフィルムは,エビの新鮮さを監視するための有効なpH感度指標です.
  • ブルーベリーエキスフィルム (FB) は,全体的に最高の性能と実用的な視覚検出能力を示しました.
  • ブルーベリーベースのインジケーターフィルムは 食品の品質保証と食品廃棄物の削減に 持続可能なアプローチを提供します
