Aberrant processing of polyphenol oxidase in a variegated grapevine mutant

Bruce's Sport, a grapevine mutant, shows reduced browning due to less active polyphenol oxidase (PPO). This PPO enzyme is synthesized as a larger precursor, with processing defects in the mutant grapes.
