Summary

Electrogustometry does not reliably measure sour taste perception, contrary to prevailing theories. This electrophysiological method appears to assess a different aspect of taste than chemical detection.

Purpose of the Study:

  • To evaluate the relationship between electrogustometry and the ability to detect sour taste.
  • To compare electrogustometry's correlation with sour, sweet, salty, and bitter taste detection.

Main Methods:

  • Compared automated electrogustometric thresholds with visual analogue scale (VAS) ratings of tastant solutions in 114 subjects.
  • Tested whole mouth and individual sides of the tongue.
  • Utilized strongest VAS scores and lowest electrogustometry thresholds for statistical analysis.

Main Results:

  • A significant correlation was found between electrogustometry threshold and whole-mouth salt taste perception.
  • Weak but significant correlations were observed for all taste qualities on the left and right tongue.
