Summary

The Danish Fat-O-Meater (FOM) and Fibre Optic Probe (FOP) show high correlation with pig meat quality traits like reflectance and drip loss 20 hours post-mortem. However, they cannot reliably classify meat into normal, PSE, or DFD categories.
