A modified low water level bath (LWL) effectively processed tomato juice, matching the high water level bath (HWL) safety. This method significantly saves time and electricity for home food preservation.
Area of Science:
- Food Science
- Microbiology
- Home Canning
Background:
- Traditional high water level bath (HWL) canning is energy-intensive.
- Optimizing water bath canning for efficiency is crucial for home food preservation.
Purpose of the Study:
- To evaluate the efficacy of a modified low water level bath (LWL) for processing tomato juice.
- To compare the safety and efficiency of LWL versus HWL methods.
Main Methods:
- Tomato juice was processed using both HWL and LWL water bath methods.
- Inoculated samples with Bacillus coagulans were stored for 12 weeks at 27°C.
- Microbiological analysis (aerobic mesophiles) was performed throughout storage.
Main Results:
- The LWL bath required less time (34 min vs. 59 min) and electricity (1065 Wh vs. 1838 Wh).
- Both methods achieved comparable microbiological safety, with low aerobic mesophile counts (<1 log per ml) after 8 weeks.
- Minimal differences in microbial counts were observed between LWL and HWL processed samples.
Conclusions:
- The low water level bath (LWL) is as effective as the high water level bath (HWL) for processing tomato juice.
- LWL processing offers substantial savings in time and electricity.
- This modified method provides a safe and efficient alternative for home canning.

Pre-mRNA Processing: Modification of pre-mRNA Ends
Once about 20-40 ribonucleotides have been joined together by RNA polymerase, a group of enzymes adds a cap to the 5' end of the growing transcript. In this process, a 5' phosphate is replaced by modified guanosine that has a methyl group attached (7-methyl guanosine). This 5' cap helps...
