Does vitamin fortification affect light oxidation in fluid skim milk?

Vitamin fortification does not prevent light-induced off-flavors in skim milk. Studies show vitamin A fortification can cause floral notes, but typical cardboard and mushroom flavors remain unaffected by added vitamins.
