Comparison of Restructured Chops Manufactured from Prerigor and Postrigor Pork

Salted pork chops, whether prerigor or conventionally processed, showed reduced appearance quality but improved tenderness and juiciness over time. Prerigor pork did not differ from conventionally processed pork in these quality attributes.
