Novel oleogel formulation based on amaranth oil: Physicochemical characterization.

This study shows that amaranth oil oleogels (OGs) created with monoglyceride (MG) have improved oxidative stability and a solid structure. These OGs preserve essential fatty acids, making them a promising alternative to traditional fats.
