Purpose of the Study:

  • To assess microbial and temperature dynamics in boxed beef during 15 days of transport and distribution.
  • To compare the effectiveness of vacuum packaging versus MAP in inhibiting microbial growth.
  • To evaluate the suitability of excision versus swab sampling methods for microbial analysis.

Main Methods:

  • Hanwoo steer top round and striploin (quality grade 1) were used.
  • Samples were packaged under vacuum or MAP and stored under refrigeration (4 ± 2°C).
