Ochratoxin A and its reaction products affected by sugars during heat processing

Adding sugars like fructose during food processing can reduce levels of the nephrotoxin Ochratoxin A (OTA) and its toxic byproducts. Fructose is particularly effective at lowering OTA and promoting less harmful degradation products.
