Efficient Concentration of Functional Polyphenols Using Their Interaction with Gelatin

This study shows heat-stabilized gelatin can concentrate functional polyphenols from green tea extract. The concentrated polyphenols, including flavan-3-ols, retain their radical scavenging activity.
