Low-pressure spray drying (LPSD) effectively preserves serum protein powder properties, similar to freeze drying (FD), unlike atmospheric spray drying (ASD). LPSD offers a cost-effective method for producing high-quality serum whey protein powder.
Area of Science:
- Food Science
- Protein Chemistry
- Drying Technologies
Background:
- Serum protein powder is a valuable source of bioactive compounds.
- Drying methods significantly impact powder properties and protein integrity.
- Optimizing drying techniques is crucial for preserving protein functionality.
Purpose of the Study:
- To compare the effects of atmospheric spray drying (ASD), low-pressure spray drying (LPSD), and freeze drying (FD) on serum protein powder characteristics.
- To evaluate changes in bioactive proteins and protein profiles using proteomics.
- To determine the most effective and cost-efficient drying method for serum whey protein powder production.
Main Methods:
- Serum protein concentrate was subjected to ASD, LPSD, and FD.
- Powder properties (total solids, water activity, fat, lactose, solubility) were analyzed.
- Protein concentration and activity were measured.
- Proteomics analysis identified 245 proteins.
- Scanning electron microscopy (SEM) visualized powder microstructure.
Main Results:
- FD powder had higher total solids and water activity than ASD and LPSD powders.
- LPSD and FD preserved protein concentration and activity, while ASD decreased them.
- ASD and LPSD produced spherical powders; FD produced flake-like powders.
- No significant differences in fat, lactose, or solubility were observed across methods.
Conclusions:
- Low-pressure spray drying (LPSD) is a viable alternative to freeze drying (FD) for serum protein powder production.
- LPSD effectively retains protein concentration and activity, with a spherical microstructure.
- LPSD presents an effective and economical method for producing high-quality serum whey protein powder.
