Area of Science:

  • Food Science
  • Biotechnology
  • Chemical Engineering

Background:

  • Grape pomace is a rich source of bioactive compounds.
  • Extracting these compounds efficiently is crucial for valorization.
  • Pulsed electric fields (PEF) offer a scalable method for enhancing extraction.

Purpose of the Study:

  • Optimize PEF-assisted extraction for bioactive compounds from red grape pomace.
  • Determine optimal PEF conditions (field strength, energy input) using response surface methodology (RSM).
  • Evaluate the impact of PEF on extraction yields and phenolic composition.

Main Methods:

  • Utilized response surface methodology (RSM) to optimize PEF parameters.
  • Assessed cell disintegration index (Z) as a response variable.
  • Investigated effects of temperature, time, and solvent concentration on extraction yields (TPC, FC, TAC, TC, FRAP).
  • Analyzed phenolic composition using HPLC-PDA.

Main Results:

  • Optimal PEF conditions (4.6 kV/cm, 20 kJ/kg) significantly enhanced cell membrane permeabilization.
  • PEF treatment increased TPC by 15%, FC by 60%, TAC by 23%, TC by 42%, and FRAP by 31%.
  • HPLC-PDA confirmed epicatechin, p-coumaric acid, and peonidin 3-O-glucoside as major compounds with no PEF-induced degradation.

Conclusions:

  • PEF-assisted extraction is effective for intensifying the recovery of high-value compounds from grape pomace.
  • Optimized PEF process shows potential for large-scale application in winemaking residue valorization.
