Summary

Beta-cyclodextrin (β-CD) forms amphiphilic inclusion complexes with ginger oil (GO) that self-assemble into microcrystals. These microcrystals stabilize GO Pickering emulsions by aggregating at the oil-water interface, clarifying their formation mechanism.
