Coffee protein concentrates were evaluated for nutritional quality. Green coffee beans yielded the highest protein content and digestibility, contrary to previous reports of high branched-chain amino acids.

- Further research into the techno-functional and sensory properties of coffee protein is recommended for diverse food applications.
