Water dilution of chicken egg whites causes significant precipitation, particularly from thick egg white (TKEW). Lysozyme and mucin-5B are key proteins contributing to this egg white precipitation.
Area of Science:
- Food Science
- Protein Chemistry
- Biochemistry
Background:
- Chicken egg white (EW) undergoes turbidity and precipitation upon dilution with deionized water.
- Precipitation is more pronounced in thick egg white (TKEW) compared to thin egg white (TNEW) and whole egg white.
- Understanding egg white precipitation is crucial for processing and product development.
Purpose of the Study:
- To systematically investigate the formation, characteristics, and composition of egg white precipitates induced by water dilution.
- To identify key proteins responsible for precipitation in different egg white fractions.
- To provide a theoretical basis for reducing water-induced egg white precipitation.
Main Methods:
- Dilution of whole egg white, thick egg white, and thin egg white with deionized water.
- Gravimetric analysis of precipitate formation.
- Quantitative proteomic analysis to identify differentially abundant proteins.
Main Results:
- Thick Egg White Precipitates (TKEWP) constituted 14.47% of TKEW dry matter, significantly higher than other fractions.
- Quantitative proteomics identified 27 differentially abundant proteins (p < 0.05).
- Lysozyme abundance was higher in TNEWP and TKEWP, while mucin-5B showed the highest abundance in TKEWP.
Conclusions:
- Lysozyme is a key protein in egg white precipitation induced by water dilution.
- The insolubility of mucin-5B significantly contributes to the substantial TKEWP formation.
- This study offers novel insights into egg white processing characteristics and precipitation mechanisms.
