Unveiling the Potential of Lactic Acid Bacteria from Serbian Goat Cheese

Indigenous lactic acid bacteria (LAB) from Serbian goat cheese were evaluated for safety and technological properties. Promising strains were identified as potential starter cultures for enhancing goat milk cheese quality and safety.
