  • Optimal UAE conditions yielded 19.75% extraction yield and 92.87% protein content.

  • The optimized UAE process achieved a desirability value of 0.82.

Conclusions:

  • Ultrasound-assisted extraction is a superior and greener method for producing high-purity faba bean protein isolates.
  • Box-Behnken Design effectively optimizes extraction parameters for improved yield and protein content.
  • The developed UAE method offers significant advantages over conventional magnetic stirring for faba bean protein isolation.
