Since 1997, the In Vino Analytica Scientia symposia (IVAS) have provided an international platform for researchers to present novel analytical science relevant to grapes, wines, and spirits. Within this article the symposium history is outlined, paying homage to those who have contributed so much to the ongoing success of IVAS. Details for the 13th edition of IVAS, held at the University of California Davis campus on 9-12th July, are provided along with a welcome to the IVAS/JAFC special issue.

Preparation of Ethers by Alcohol Dehydration
In this method, in the presence of protic acids, alcohol dehydrates to produce alkenes and ethers under different conditions. For example, in the presence of sulphuric acid, dehydration of ethanol at 413 K yields ethoxyethane, whereas it yields ethene at 443 K.
